Pork Loin Rub


This is my new favorite rub for pork loin.

1 tbsp brown sugar
1 tbsp paprika
1 tbsp ground black pepper
1 tbsp cumin
1 tbsp kosher salt
1 tsp ginger
1 tsp allspice
1 tsp cayenne pepper

Also, here's a basic brine mixture that I like to soak the meat in overnight as well.

2 quart water
1 cup kosher salt
1 cup sugar
